Ingredients
- 250 g chickpeas
- few pcs chard
- 1 sweet potato
- 150 g chicken
- 100 g tofu
- 1/2 onion
- 1 herb mixture olive oil, salt, pepper, chili, basil, oregano, garlic
- 1 pinch sesame
Instructions
Veggies
- Cook chard in salted water 20 minutes.
- Preheat oven to 200 degrees.
- Peel and wash sweet potato, cut to cubes.
- Drain chickpeas.
- Marinate sweet potato and chickpeas in the herb mixture.
- Spread over the baking paper and bake for 20 minutes / 200 degrees.
Chicken/tofu skewers
- Wash chicken breasts and dry them with paper towel. Cut into cubes.
- Cut tofu into cubes.
- Marinate in the herb mixture.
- Stir fry cubes on the oil and onion on the high temperature. Chicken 10 minutes, tofu 5 minutes.
- Attach cubes into the skewer wooden sticks.
- Serve with a veggie bowl.
Notes
- Use leftovers of pasta, quionoa, lentil, couscous, rice beside veggies.
- Make a simple peanut sauce: mix peanut butter, little balsamic vinegar, drop of soy sauce, salt and pepper.
