Asparagus season has just started and I was literally running to the grocery store to test new recipe which is, by the way, perfect for gatherings and parties. “Oh, that looks amazing!” said my friends with their mouth full: “And so delicious, what a great idea!” So, I consider this recipe a success.
These green nutrition packs are not just low in calories, but they also have lots of health benefits. But rolled with the dough strips, with pesto and Pancetta, they become very original side dish and very inviting savoury treat.
Pancetta Asparagus Puff Pastry Spirals
Ingredients
- 1 pack puff pastry
- 20 pcs asparagus
- 6-8 slices Pancetta
- 2 tbsp Basil pesto Pesto Genovese
- olive oil
- Salt & pepper
Instructions
- Remove the woody part of the asparagus, wash and dry with a paper towel.
- Drizzle asparaguses with olive oil, season with salt and pepper. Set aside.
- Preheat oven to 200 degrees.
- Roll out puff pastry sheet and spread pesto all the way to the edges.
- Then place slices of Pancetta.
- Using a small knife, cut 1 cm wide notches down the shorter side. You will get about 20 strips.
- Carefully wrap the asparaguses with the coated dough strip and place them on a larger baking tray lined with baking paper.
- Coat the dough spirals with olive oil before baking.
- Bake for 12-15 minutes at 200 degrees.
Notes
TIPS:
If asparaguses are very thick I recommend to grill them first on a hot oiled pan for 10 minutes with turning them, that they are grilled from each side all around.
