Rice Meatballs

Jump to Recipe

As you may know my vegetarian soul doesn’t mind to cook meaty recipes. I love to explore all kinds of dishes for my family. And these comforty rice meatballs are just a perfect sample of a great family dish.

Easy and really quick to make, mid-week lunch idea. They are very nutritional, since the meat is combined with rice. As a side dish, main dish or even a sandwich filling (oh, I can imagine Jamie Oliver stuffing his sandwich with those).

Wild Rice Meatballs

  • 500 g minced ground beef
  • 50 g Basmati rice
  • fresh parsley handful
  • fresh basil handful
  • 1 shallot
  • 1 egg
  • 1 tsp salt
  • 1 tsp smoked paprika spice
  • 1/2 tsp black pepper
  • 1/2 tsp oregano
  • 2 tbsp olive oil
  • 200 g canned tomato puree
  • 120 ml water

  • Chop the shallot, parsley and basil with knife or with a chopper and place in a large bowl.
  • Add all remaining ingredients except tomato sauce and water and oil.
  • Mix the mixture well and form balls.
  • Add 2 tablespoons of oil to the pan.
  • Place the balls on the hot oil and quickly fry them on all sides so that they keep their shape better.
  • Add the tomato puree and let it bubble for 2 minutes at a medium temperature.
  • Add water and let the balls cook for 30-35 minutes.
  • Serve with fresh herbs as an independent dish or side dish.
